I love using ground bison for this chili recipe. Bison is a great source of lean protein, which is essential for building and repairing tissues in the body. Bison typically has a lower fat content compared to other meats like beef, making it a good option for those looking to enjoy beef but also lower their overall fat intake. The leanness of the bison also means you don’t have to drain any fat, which saves a bit of time and hassle when pulling this chili together.


Ingredients

  • 2 tbsp extra virgin olive oil

  • 1 organic vedalia onion, chopped

  • 1 organic green bell pepper, diced

  • 3 cloves organic garlic, minced 

  • 2 tsp organic ground cumin

  • 2 tsp organic paprika

  • ½ tsp organic coriander

  • 2 lbs. grass-fed ground bison

  • 2 – 18.5 oz jars organic crushed tomatoes

  • 1 – 7 oz jar organic tomato paste

  • 2 cups organic beef bone broth

  • 1/2 tsp Pink Himalayan salt

  • 1/4 tsp freshly ground pepper

  • 1 box (13.4 oz) kidney beans, drained and rinsed

  • 1 can (15.5 oz) pinto beans, drained and rinsed

 


Prep Time: 15 Min // Cook Time: 1 hour

Heat the oil in a Dutch oven or large pot over medium heat. Add the onion and bell pepper and cook stirring occasionally until soft, about 7-9 minutes. Add the garlic and cook for another minute. Add the cumin, coriander, and paprika and cook for about a minute. Add the ground bison and cook while breaking up the meat with a spoon until the meat is no longer pink.

Add in the tomatoes, tomato paste, bone broth, salt, and pepper and stir to combine. Simmer partially covered, stirring from time to time for 30 minutes. Mix in the beans and cook partially covered for 20 minutes longer. Season to taste with additional salt and pepper if needed.

 

Notes & Options:

  • Feel free to add red pepper flakes or chili powder to give it a kick, I just prefer a more mild and earthy chili.

  • If you don’t have bison you could substitute ground beef, but there will be fat to drain off if you choose to go with beef over bison.
