These deconstructed tacos aren’t fancy, but they come together quick and make a great easy meal for the whole family. Keep them as shown or add some beans and/or rice to bulk the recipe up a bit.


Ingredients

  • 2 lbs organic ground chicken

  • 1 package organic taco seasoning

  • Organic shredded cheese

  • Tomatoes, avocado, tortilla chips, and any other toppings you desire


Cook the ground chicken over medium heat until cooked through and no longer pink. Add the package of taco seasoning and 1/3 cup of water and mix everything together. Reduce the heat to low and simmer for 2-3 minutes until thickened.

Transfer your portion to a bowl or portion out into meal preparation containers. Top the cooked meat with shredded cheese and add a side of tomatoes, avocado, and tortilla chips.

If you want to make this into a heartier meal, you could add a side of beans and/or rice.

Options & Notes:

  • I used Siete brand taco seasoning.

  • You could swap out the ground chicken for ground turkey, beef or bison.

  • This is a great make ahead lunch that you can portion into meal prep containers.
