Deconstructed Tacos
These deconstructed tacos aren’t fancy, but they come together quick and make a great easy meal for the whole family. Keep them as shown or add some beans and/or rice to bulk the recipe up a bit.
Ingredients
2 lbs organic ground chicken
1 package organic taco seasoning
Organic shredded cheese
Tomatoes, avocado, tortilla chips, and any other toppings you desire
Cook the ground chicken over medium heat until cooked through and no longer pink. Add the package of taco seasoning and 1/3 cup of water and mix everything together. Reduce the heat to low and simmer for 2-3 minutes until thickened.
Transfer your portion to a bowl or portion out into meal preparation containers. Top the cooked meat with shredded cheese and add a side of tomatoes, avocado, and tortilla chips.
If you want to make this into a heartier meal, you could add a side of beans and/or rice.
Options & Notes:
I used Siete brand taco seasoning.
You could swap out the ground chicken for ground turkey, beef or bison.
This is a great make ahead lunch that you can portion into meal prep containers.
