This salad comes together quickly and is packed with protein thanks to the combination of chicken and lupini beans.

Lupini beans are high in protein and low in carbohydrates compared to other beans. My favorite way to enjoy lupini beans are on a salad, but my daughter loves eating them plain as a snack. They have the most protein per calorie of any plant, are a complete protein, and an excellent source of fiber. Lupini beans have lower levels of phytic acid, oligosaccharides, and lectins which make them easier to digest compared to other legumes.

They contain generous amounts of manganese, copper, magnesium, phosphorus, potassium, and zinc. A bonus benefit of lupini beans is that they can help establish a healthy gut. Their high level of prebiotic fiber contributes to the development of gut-healthy probiotics.


Ingredients

• Organic spring mix

• Ready to eat lupini beans (I used Brami Italian Snacking Beans, Sea Salt & Vinegar)

• Organic English cucumber

• Organic grape tomatoes

• Avocado

• Organic grilled chicken breast

• Primal Kitchen Italian Dressing & Marinade

• Organic feta cheese (I used Kourellas Organic Barrel Aged Feta)


Grill chicken and once cooled cut it into cubes. Lightly drizzle Primal Kitchen Italian Dressing on the cubed chicken and mix.

Add spring mix, cucumber, tomato, avocado, chicken, lupini beans, and feta to a bowl. Drizzle with some extra virgin olive oil and enjoy!


Notes:

  • If you buy raw lupini beans please be sure to properly prepare them and do not ingest them raw as they are toxic due to the presence of bitter alkaloids.

  • Individuals with peanut allergies may also have an allergic reaction to lupini beans so proceed with caution if you have a nut allergy.
