Three Bean Turkey Chili
This recipe is bursting with flavor and packed with wholesome ingredients, featuring lean turkey, fiber-rich beans, bone broth for added protein, and an array of veggies and spices. I’m a simple girl when it comes to chili. I definitely prefer a more earthy and mild flavor so this one opts out of the spicy factor, but feel free to add a kick to your version if you prefer.
Ingredients
2 tbsp olive oil
1 organic onion, diced
1 organic red bell pepper, diced
2 organic carrots, diced
3 tsp organic ground cumin
2 lbs organic ground turkey
2 – 18.5 oz jars organic crushed tomatoes (I used Jovial)
2 cups organic chicken bone broth (I used Kettle & Fire)
½ tsp organic dried oregano
Pink Himalayan salt & freshly ground pepper
1 box (13.4 oz) organic kidney beans, drained and rinsed
1 box (13.4 oz) organic black beans, drained and rinsed
1 box (13.4 oz) organic cannellini beans, drained and rinsed
Heat the oil in a Dutch oven or large pot over medium heat. Add the onion, bell pepper, and carrots, and cook stirring occasionally until the vegetables are soft, about 7-9 minutes. Add the cumin and cook, stirring for 1 minute. Then add the ground turkey and raise the heat to high. Cook, breaking up the meat with a spoon until the meat is no longer pink.
Stir in the tomatoes, bone broth, oregano, salt, and pepper and simmer partially covered, stirring from time to time for about 30 minutes. Then stir in beans and cook partially covered for 20 minutes longer. Season to taste with additional salt and pepper if desire.
*Add red pepper flakes or chili powder to add a kick, I just prefer a more mild and earthy chili.
Notes:
Feel free to add water or more bone broth if you prefer a more liquid-y chili.
