Hearty Turkey Minestrone Soup

This Hearty Turkey Minestrone is not only rich in flavor but also a nutrient-packed dish that’s perfect for busy nights. It’s loaded with vitamins, minerals, and lean protein to keep you feeling full and satisfied, and it can easily be adjusted to suit your preferences—add more vegetables, swap in your favorite beans, or even add pasta!


Ingredients

  • 3 tbsp avocado oil or extra virgin olive oil

  • 4 organic celery stalks, diced

  • 3 large organic carrots, peeled and diced

  • 1 organic yellow onion, peeled and diced

  • 1 organic garlic clove, peeled and minced

  • 2 lb organic ground turkey

  • 2 cups organic chicken bone broth (such as Kettle & Fire)

  • 4 cups filtered water

  • 1 (18.5 oz) jar organic diced tomatoes (such as Jovial)

  • 2 small unpeeled organic yellow potatoes, washed and diced

  • 1 tbsp dried organic oregano

  • 1 tsp sea salt

  • 1 ½ tsp organic dried Italian seasoning

  • 1 tsp organic paprika

  • ½ tsp freshly ground black pepper

  • 1 (15.5 oz) can organic navy beans, drained and rinsed

  • 1 cup organic frozen cut green beans

  • 2 cups organic frozen chopped spinach


  1. Heat the Oil: In a large Dutch oven or pot, heat 3 tablespoons of avocado oil or extra virgin olive oil over medium heat.

  2. Sauté Vegetables: Add the diced celery, carrots, and onion to the pot. Cook for about 5-7 minutes, stirring occasionally, until the vegetables begin to soften. Add the minced garlic and cook for an additional minute until fragrant.

  3. Cook the Turkey: Add the ground turkey to the pot, breaking it up into small pieces with a spoon. Cook for about 5 minutes until the turkey is no longer pink.

  4. Add Liquids and Seasonings: Pour in the chicken bone broth and 4 cups of filtered water. Add the diced tomatoes, diced yellow potatoes, oregano, sea salt, Italian seasoning, paprika, and black pepper. Stir everything together and bring the mixture to a simmer.

  5. Simmer the Soup: Cover the pot and simmer for 10-15 minutes, or until the potatoes are tender.

  6. Add Beans and Greens: Once the potatoes are cooked, stir in the navy beans, green beans, and chopped spinach. Continue cooking for an additional 15 minutes until all the vegetables are heated through and the flavors have melded together.

  7. Serve: Ladle the hearty turkey minestrone into bowls and serve hot. You can garnish with freshly grated Parmesan cheese, a squeeze of lemon, or fresh parsley for added flavor.


Notes & Options:

  • I love to keep frozen veggies on hand to be able to pull this soup together in a pinch or when I haven’t had time to go to the grocery store.

  • I always keep ground turkey in the freezer so I can defrost and whip this together without having to go to the grocery store.

  • You can increase the turkey quanity to 2 lbs for a more protein forward and filling meal. Just add another 2 cups of liquid - either bone broth or water.  

    This recipe provides 2 days of lunch for our family of 3 (2 adults, 1 kid).
