Ground Turkey Zucchini Boats
Our garden usually has an abundance of zucchini at the end of July and early August, so this recipe is a summer staple for our family. These are really easy to make and only require a handlful of ingredients, so if your garden is overflowing with zucchini you have to give this recipe a try.
Ingredients
2 lbs. organic ground turkey
8 - 10 oz organic shredded mozzarella
24 oz organic marinara sauce
1 medium onion, chopped
4 - 5 medium zucchini, cut in half lengthwise and deseeded
Salt and pepper, to taste
Preheat the oven to 400 degrees.
Add 1 – 2 tbsp extra virgin olive oil to a skillet over medium heat. Add the chopped onion and sauté for about 5 minutes. Add the ground turkey, sprinkle with a little salt and pepper, and cook for about 8 minutes, breaking apart with a wooden spoon while it cooks. Once the turkey is cooked, add the marinara sauce and cook for an additional 5 minutes.
As the turkey cooks, cut each zucchini in half, lengthwise. Use a spoon to scoop the seeds out of each half and place the zucchini boats cut side up in a 9 x 13 baking dish. Depending on the size of the zucchini you may need another small baking dish.
Once the turkey, onion, and sauce mixture is ready, scoop it evenly into the zucchini boats. Sprinkle the mozzarella cheese over the boats and cook in the oven for 15 – 20 minutes until the zucchini is fork tender and the cheese has melted.
Notes:
You can enjoy the zucchini boats on their own or pair them with some extra vegetables or a side salad.
Feel free to use ground chicken or beef instead of turkey.
If you’re short on time use jarred marinara sauce. I love Seggiano tomoato basil for this recipe.
I usually buy the 16 oz bag of mozzarella and use about 2/3 - 3/4 of the bag depending on the size of the zucchinis.
Feel free to swap out the mozzarella for parmesan or your favorite cheese. If you are dairy-free you can also omit the cheese.
