Banana Oat Protein Cookies
This is the perfect recipe for when you are craving something sweet and have some ripe bananas that need to be used.
Ingredients
1 1/2 cups organic quick cooking oats
1 scoop unflavored protein powder
1/2 tsp organic cinnamon
3 medium very ripe bananas, mashed
2 tbsp organic creamy peanut butter
1/2 tsp organic vanilla extract
1 tsp raw honey
1/4 cup Hu dark chocolate gems, roughly chopped
1/4 cup organic walnuts (optional), roughly chopped
Preheat oven to 350 degrees and line a baking sheet with parchment paper.
Stir oats, protein powder, and cinnamon in a medium bowl. In a separate bowl mash the bananas. Add peanut butter, vanilla extract, and honey to the mashed bananas and mix well. Add wet ingredients to the dry and stir well. Finally, mix in the dark chocolate and walnuts (if using) and stir to combine.
Use an ice cream scoop to form the cookies and place on the parchment lined baking sheet.
If needed, press down slightly to form a cookie shape and bake for about 12-15 minutes. Cool on the baking pan for a few minutes prior to moving to a cooling rack to cool completely.
Makes about 10 cookies.
Notes:
These cookies freeze well so feel free to make a double batch and freeze the extras for a quick snack.
With added protein and no refined sugars, these cookies make a great after school snack option.
You can substitute regular chocolate chips, raisins, and/or nuts if you prefer.
