Chocolate Chip Protein Balls
These protein balls are refined sugar and dairy free, and so quick and easy to make. They are sweetened with dates and full of healthy fats and fiber from the cashews and flaxseeds. I like to make an extra batch and keep them in the freezer so I can pop some out whenever I need a quick snack.
Ingredients
6 organic medjool dates, pitted
1 1/2 cups organic cashews
1/2 cup filtered water
1 scoop vanilla protein powder (I used Be Well By Kelly Leveque)
1/4 cup organic flaxseeds
1 tsp organic cinnamon
1 tsp organic vanilla extract
1/2 cup organic coconut flakes, unsweetened
1/4 cup Hu Kitchen dark chocolate chips
Add all ingredients except the chocolate chips to a food processor and blend until a smooth dough is formed.
Transfer the mixture to a bowl and stir in the chocolate chips.
Refrigerate the dough for about 30 minutes and then form into dough balls. Store protein balls in the refrigerator, or freeze for later.
Makes about 15 protein balls
Options & Notes:
You could also use almonds or a mixture of cashews and almonds if you prefer.
