Peanut Butter Pumpkin Cereal Balls


Ingredients

  • 3 cups Lovebird Unsweetened O’s cereal

  • 1/3 cup organic pumpkin puree

  • 1/3 cup organic maple syrup

  • ½ cup creamy organic peanut butter

  • 1 tsp organic vanilla extract

  • 1 tsp organic cinnamon

  • 1/2 tsp organic nutmeg


Place the cereal in a large bowl and set aside.

Add the pumpkin puree, maple syrup, peanut butter, vanilla extract, cinnamon, and nutmeg to a small pot and constantly stir over medium/low heat until well combined and smooth. Add this warmed mixture to the cereal and stir until the cereal is completely covered.

Scoop the mixture into a mini cupcake pan and place in the freezer for at least 30 minutes.

The cereal softens a little bit, so I like to consume these right away or keep them in the freezer until I’m ready to use for the best texture.

Notes:

  • You can also flatten the mixture into a parchment lined pie dish or any other shape you desire.
