The Best Chia Pudding
This is my favorite go-to breakfast and keeps me feeling full for hours!
Chia seeds are packed with anti-inflammatory omega-3 fatty acids. They are an excellent source of fiber, which can improve heart health, reduce cholesterol levels, and promote digestive health. These tiny seeds are a plant-based complete protein and are loaded with antioxidants, fiber, calcium, magnesium, and potassium.
In addition to chia seeds, I gave this recipe an extra boost of nutrients by adding some ground flaxseeds and hemp hearts.
Hemp hearts are a complete protein and add some extra omega-3 & omega-6 fatty acids and fiber. They are a good source of both soluble and insoluble fiber, which is great for gut health and digestion. They are also rich in iron, vitamin B6, and folate.
Flaxseeds are another great source of protein, fiber, and inflammation reducing omega-3 fatty acids. They have tons of vitamins; A, B1 and B12, calcium, magnesium, potassium, and iron to name a few.
Ingredients
1 can organic coconut milk
1/3 cup organic chia seeds
2 tbsp organic ground flaxseeds
2 tbsp organic hemp hearts
1 scoop unflavored protein powder (optional)
In a large bowl or glass storage container, add dry ingredients and mix. Add coconut milk to the dry ingredients and whisk for about 1 minute. Let sit for 30 minutes and whisk again. Refrigerate for a minimum of 4 hours or overnight.
Top with peanut butter, berries, and nuts (I used walnuts)
Makes 2 servings
Options:
You can switch out any type of milk; light coconut and almond are both great options.
After mixing you can portion the chia pudding into mason jars and add your toppings for an easy grab and go breakfast.
If you find that you need a little more sweetness you can add a splash of maple syrup or vanilla extract. You could also add vanilla protein instead of unflavored.
