Cacao Triple Seed Protein Pudding

Chia pudding is my favorite breakfast. Even though I love my standard recipe, I need to change things up once in a while. I figured I couldn’t go wrong by adding some cacao and peanut butter, and I think you’ll agree that this one is a winner! This recipe is so versatile that you can have it for breakfast, snack, or even dessert.

Cacao is the raw version of cocoa and is the least processed version of the two, which makes it more nutritious and packed with essential vitamins and minerals. Cacao is a great source of micronutrients, which are vital to your health and help promote healthy skin, hair, nails, and bones. Cacao is rich in magnesium, chromium, copper, zinc, and calcium to name just a few.

Chia seeds are loaded with antioxidants, plant-based protein, fiber, and omega-3 fatty acids. Hemp hearts and flaxseeds are also both great sources of plant-based protein, fiber, and inflammation reducing omega-3 fatty acids. These three seeds together, combined with the antioxidant properties in cacao, are an amazing combination.


Ingredients

  • 4 tbsp organic chia seeds

  • 4 tbsp organic ground flaxseeds

  • 4 tbsp organic hemp hearts

  • 2 tbsp organic cacao powder

  • 1 scoop unflavored protein powder

  • 2 cups organic unsweetened almond milk

  • 2 tbsp organic peanut butter


Whisk chia seeds, flaxseeds, hemp hearts, cacao powder, and protein powder in a bowl. Add almond milk and whisk for about a minute. Whisk in the peanut butter, cover, and refrigerate overnight. Top with cinnamon, blueberries, and/or banana before serving.

Makes 2 servings

Notes & Options:

  • You can switch out any type of milk; light coconut milk is a great option.

  • Almond butter can be used instead of peanut butter, I just prefer the combination of peanut butter and cacao here.

  • After mixing you can portion into 2 mason jars and add your toppings for an easy grab and go breakfast.

  • I mix everything in a glass storage container so I can just pop the lid on and place it in the fridge after mixing.
