Chocolate Peppermint Chia Pudding
I absolutely love chia pudding and make it at least once a week as a breakfast or snack for my family. It’s so easy to prepare in advance, delicious, and filled with so many wonderful nutrients. If you are a fan of mint and chocolate, you are going to love this version!
Ingredients
1 cup organic unsweetened almond milk
1/4 cup organic unsweetened coconut cream
1 tsp organic vanilla extract
1/8 tsp peppermint extract (not flavor) or a few fresh mint leaves
1/4 cup organic chia seeds
1 tbsp organic ground flax seeds
1 tbsp organic hemp hearts, plus 1 tbsp for topping
1 scoop Be Well By Kelly chocolate protein powder
1-2 tbsp organic cashew butter
Whisk chia seeds, hemp hearts, and flax seeds in a medium bowl. Blend the almond milk, coconut cream, vanilla extract, peppermint extract, protein powder and cashew butter in a blender until combined. Add the liquid from the blender to the bowl with your chia, flax and hemp heart mixture and stir for about a minute to combine. Let the mixture sit for 30 minutes, whisk again, and refrigerate for a minimum of 4 hours or overnight.
Portion out 1 serving in a bowl and top with 1 tbsp hemp hearts and organic blueberries.
Makes 2 servings
Notes & Options:
After mixing you can portion the chia pudding into 2 mason jars and add your toppings for an easy grab and go breakfast.
Make sure you are using pepperming extract and not peppermint flavor. Many times extract will contain unnecessary seed oils so be sure to peek at the label and avoid these added ingredients if possible.
Depending on the brands and preciseness of your measurement the final product may be a little thicker than you desire. Just add a little filtered water or almond milk and stir prior to serving and that should thin it out a bit.
