Pumpkin Yogurt Bowl
It’s pumpkin spice season and I’m adding pumpkin to everything I can!
Greek yogurt is a great snack on its own – high in protein, lower in carbs than regular yogurt, and filled with probiotics to help improve the health of your gut. While I love Greek yogurt, it can get a bit boring, so I spiced this version up with some true Fall pumpkin spice flavor, a crunch of granola, and extra protein from the pumpkin seeds.
Pumpkin seeds usually get overlooked this time of year for lacking that delicious pumpkin spice flavor, but did you know that pumpkin seeds are considered a complete plant protein due to their amino acid content, and contain 12 grams of protein per cup? An added bonus: 1/4 cup of pumpkin seeds will provide you with half of the magnesium you need for the day.
Ingredients
3/4 cup plain organic Greek yogurt
1/4 cup canned organic pumpkin puree
1/4 tsp organic pumpkin pie spice
1 scoop clean vanilla protein powder
Pumpkin seeds (topping)
Keto/Grain-free granola (topping)
Place everything in a bowl and stir to combine – yes, it’s that easy!
I topped mine with a little Purely Elizabeth Grain Free Vanilla Almond Butter Granola and organic pumpkin seeds.
